Oregano Pistachio Garlic Scape Pesto
Use up your scapes with this tasty pesto that can be tossed with pasta or eaten with crackers/bread as an appetizer.

- 1/4 cup pistachios about 50 pistachios, without shells
- 1/2 cup oregano fresh
- 7 garlic scapes cut into 1 inch pieces
- 1/4 cup olive oil extra virgin
- 1/4 cup parmesan cheese grated
- 1/8 tsp salt or to taste
- pinch pepper or to taste
In a food processor, add the pistachios, oregano, scapes, parmesan cheese, salt, and pepper. Process until finely chopped.
Slowly add the olive oil while processing.
