Shredded Chicken Parmesan Patties

“What would you like for dinner?” “What are the options?” “Well we have chicken and ground turkey, but they are in the freezer so I have to use the pressure cooker. The chicken would probably need to be shredded.”

“What about chicken parmesan but shredded with bread crumbs and cheese and fried up…do we have bread crumbs?” “We have cornflake crumbs.” “Ok…am I crazy?” “No, that actually sounds pretty good.”

And here we are with my husband’s crazy idea that was very delicious actually.

Feel free to use bread crumbs if you have some in your pantry!

If you don’t have a big enough pan for all the patties, you will need to work in batches. Add more oil to the pan as needed.

Ingredients
  

  • 2 cups shredded chicken breast
  • 1 cup tomato sauce plus more for serving
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp rosemary dried
  • 1/4 tsp thyme dried
  • 1/4 tsp oregano dried
  • 1/4 tsp sage dried
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 cup mozzarella cheese shredded
  • 1 large egg beaten
  • 1 cup cornflake crumbs
  • 4 tbsp parmesan cheese grated
  • olive oil

Instructions
 

  • Preheat large non-stick pan on medium heat.
  • In a large bowl, combine chicken, seasonings, mozzarella cheese, tomato sauce, cornflakes, and egg.
  • Divide mixture into 6 and form patties.
  • Coat each patty with 2 tsp parmesan cheese.
  • Pour 2 tbsp olive oil in preheated pan.
  • Carefully place patties in pan and cook on medium heat for about 4- 5 mins.
  • Flip patties and continue cooking for another 4- 5 mins until heated through.
  • Serve with additional sauce. Enjoy!
