This was an attempt at Pumpkin Bars…but long story short, it’s a cake recipe. Enjoy!

Pumpkin Spice Cake

Ingredients
  

  • 2 1/4 cups all-purpose flour 290 grams
  • 2 tsp pumpkin pie spice
  • 2 tsp ground cinnamon
  • 2 tsp baking soda
  • 1 tsp salt
  • 3/4 cup salted butter softened
  • 1 cup brown sugar packed
  • 2/3 cup sugar
  • 2 large eggs
  • 1 1/2 cup canned pumpkin puree
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350 degrees F.
  • In a medium bowl, combine flour, pumpkin spice, cinnamon, salt, and baking soda.
  • In a large bowl with electric hand or stand mixer, beat butter until creamy.
  • Add brown sugar and sugar and beat together until fully combined.
  • Add eggs and vanilla and beat until combined and fluffy.
  • Stir in the flour mixture until fully combined.
  • Pour into parchment paper covered 9×13 baking pan. Bake at 350 degrees for 35 minutes. Cool completely before icing.
