Peanut Butter Chicken

This is a quick and easy, yet delicious, dish for any night of the week. Serve over rice or noodles (I use whole wheat spaghetti sometimes) or cauliflower rice to keep the carbs down. You may want to add a little more water to create more sauce if using noodles.
Feel free to use more cayenne pepper or red pepper flakes to kick up the heat!
I also use a food scale to weigh the peanut butter and honey into a bowl. It’s a lot easier than trying to scrape out a little tablespoon. This little thing comes in handy all the time!
Peanut Butter Chicken
Ingredients
- 1 lb boneless skinless chicken breast diced
- 6 tbsp peanut butter 96 grams
- 1 tbsp honey 21 grams
- 6 tbsp soy sauce reduced-sodium
- 1 tbsp rice vinegar or apple cider vinegar
- 1 dash cayenne pepper or more to taste
- 1/8 cup water
Instructions
- Preheat a nonstick pan on medium heat.
- Add chicken to the pan and cook for about 10- 15 minutes or until cooked through, stirring/flipping occasionally.
- Add remaining ingredients to the pan and stir until combined. Cook an additional minute or two until heated through.
- Serve over rice, noodles, or cauliflower rice. Enjoy!
