Oregano Pistachio Garlic Scape Pesto

If you grow your own garlic, you probably end up with a bunch of scapes. This pesto turned out really well. I’m sure it would also work using basil and pine nuts, but this is what I had on hand at the time.

Oregano Pistachio Garlic Scape Pesto

Use up your scapes with this tasty pesto that can be tossed with pasta or eaten with crackers/bread as an appetizer.

Ingredients
  

  • 1/4 cup pistachios about 50 pistachios, without shells
  • 1/2 cup oregano fresh
  • 7 garlic scapes cut into 1 inch pieces
  • 1/4 cup olive oil extra virgin
  • 1/4 cup parmesan cheese grated
  • 1/8 tsp salt or to taste
  • pinch pepper or to taste

Instructions
 

  • In a food processor, add the pistachios, oregano, scapes, parmesan cheese, salt, and pepper. Process until finely chopped.
  • Slowly add the olive oil while processing.
