Balsamic Soy Chicken

This is a quick and easy teriyaki-esque chicken dish. Serve with steamed veggies and rice (or cauliflower rice to keep the carbs lower).
Each serving (1/4 of the chicken and sauce) is 2 WW Points.

Balsamic Soy Chicken
Slightly sweet teriyaki-esque chicken. Makes a quick and easy dinner with some veggies and rice.
Ingredients
- 1 pound chicken breast diced
- 1/4 cup balsamic vinegar
- 3 tbsp soy sauce reduced sodium
- 1/8 cup brown sugar packed
- 2 cloves garlic minced
- 1/2 tsp ground ginger
- 1/4 tsp crushed red pepper flakes less or more to taste
Instructions
- Preheat pan on medium heat.
- Whisk all ingredients (besides chicken) until combined. Stir in chicken.
- Pour into preheated pan and cooked covered for 5 minutes.
- Uncover, stir and cook uncovered another 5 – 10 minutes until chicken’s internal temperature is 165 degrees and sauce has thickened.
