Chocolate Chip Cookie Bars

I’m a huge fan of cookie bars. You only have to dump all the dough in a pan and cook it once instead of a constant rotation of scooping, baking, and cooling. These are soft and gooey fresh from the oven and stay soft and delicious for a couple days, if they last that long.

Ingredients

  • 1/2 cup (1 stick) salted* butter , softened
  • 1/2 cup brown sugar
  • 1/3 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1 1/8 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Directions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, beat together butter, brown sugar, and sugar until fluffy.
  3. Add egg and vanilla and beat until well mixed.
  4. In another medium bowl, stir together flour, baking soda, and salt.
  5. Gradually mix the flour mixture into the butter mixture.
  6. Stir in chocolate chips.
  7. Spread in a parchment paper lined 8 x 8 square pan.
  8. Bake at 350 degrees for 25 – 30 minutes until the edges are brown and the middle is light brown.

*If using unsalted butter, add an additional 1/4 teaspoon salt.

  • 1/2 tsp salt
  • 1 cup chocolate chips semi-sweet

Instructions
 

  • Preheat oven to 350 degrees
  • Beat butter, brown sugar, sugar, and vanilla extract until fluffy
  • Mix in egg until combined
  • Combine flour, baking soda, and salt in a medium bowl
  • Mix flour mixture gradually into butter mixture
  • Stir in chocolate chips
  • Pour dough into parchment paper lined pan and spread gently
  • Bake in 350 degree oven about 25 minutes, until lightly browned

Notes

If using unsalted butter, add an additional 1/4 tsp salt.
