Pumpkin Spice Cake
Pumpkin, spice, and everything nice!
This was an attempt at Pumpkin Bars…but long story short, it’s a cake recipe. Enjoy!
Don’t forgot to top with Cream Cheese Icing!
Pumpkin Spice Cake
Perfect blend of pumpkin and spice
Ingredients
- 2 1/4 cups all-purpose flour 290 grams
- 2 tsp pumpkin pie spice
- 2 tsp ground cinnamon
- 2 tsp baking soda
- 1 tsp salt
- 3/4 cup salted butter softened
- 1 cup brown sugar packed
- 2/3 cup sugar
- 2 large eggs
- 1 1/2 cup canned pumpkin puree
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350 degrees F.
- In a medium bowl, combine flour, pumpkin spice, cinnamon, salt, and baking soda.
- In a large bowl with electric hand or stand mixer, beat butter until creamy.
- Add brown sugar and sugar and beat together until fully combined.
- Add eggs and vanilla and beat until combined and fluffy.
- Stir in the flour mixture until fully combined.
- Pour into parchment paper covered 9×13 baking pan. Bake at 350 degrees for 35 minutes. Cool completely before icing.
